Sausage Jalapeño Macaroni and Cheese

This baked macaroni and cheese recipe with roasted jalapeños and sausage is spicy, creamy, delicious and made in under an hour!
One time my friends went on a “Macaroni and Cheese Crawl”. If you’re familiar with bar crawls, it’s the same thought, but instead of slamming beers and tequila shots, you head to the best restaurants for Mac and Cheese.
While I wasn’t able to make the crawl with them, I thought this was the best idea ever. Why, you ask? Because Macaroni and Cheese is freaking awesome!!!!
No matter what combination of cheese, pasta or additional ingredients you decide to use, it’s just a delicious, comforting meal.
As a kid, my Mom would always make me homemade Velvetta Macaroni and Cheese when I was sick. Now, every time I get sick, I run to the store to pick up Velvetta!
While this version does not include Velvetta, it does include three cheeses… and sausage… and roasted jalapeños, making it one seriously kicked up version of Macaroni and Cheese!
Sausage Jalapeno Macaroni and Cheese Ingredients
- 4 jalapeños
- 1 lb elbow macaroni
- 4 tbsp butter
- 3 tbsp flour
- 3 cups milk
- 8 oz cream cheese
- 1 cup cheddar cheese (shredded)
- 1 cup parmesan cheese (shredded)
- 1 lb sausage
- ½ cup breadcrumbs
Sausage Jalapeno Macaroni and Cheese Instructions
Turn the broiler on to high. Place the jalapenos in the oven under the broiler.
Once the skin is black and bubbling, remove the jalapenos from the oven, place in a ziploc bag and set aside.
Turn the oven from broil to bake 400°F. In a small skillet brown the sausage, set aside.
Combine the macaroni noodles and milk in a large pot. Bring to a boil on the stove and stir frequently 12-15 minutes or until noodles are al dente.
In a large skillet, melt the butter then whisk in the flour.
Add all three cheeses to the skillet.
Allow the cheeses to melt together, 2-3 minutes, then add the milk and noodles to the cheese.
Reduce heat to low and stir all of the ingredients together.
Remove the jalapenos from the ziploc bag, peel the skin, remove the seeds and dice.
Add the jalapenos and sausage to the macaroni and cheese, mix together.
If the skillet you are using is not oven safe, move the mac and cheese to a baking dish and top with the breadcrumbs. If the skillet is oven safe, simply top with the breadcrumbs.
Bake 15-20 minutes.
This dish provides spicy, cheesy goodness in every bite!
No, seriously, it’s so awesome that I actually started eating it with my fingers the minute I finished photographing it because I didn’t want to take the 10 seconds to walk into the kitchen to get a fork, haha! True story! Don’t judge me! 😉

I made this today, and OH EM GEE, it’s so good! I only used two jalapenos, and it was perfect for me. My macaroni was a bit drier than yours looks, but it still tastes good. I used unsweetened almond milk and whole wheat pasta.
