So the story begins when I purchased a donut pan. I then went on this kick of “must make gluten free donuts” then it became “must make gluten free St Patricks Day themed donuts”.

My first attempt was a Kiwi Lime donut in which I was hoping to get a naturally green frosting without using green food coloring.

To be honest, they weren’t bad, but they also weren’t the best things I’ve ever made. And as you know, only the best goes on the blog!

Back to the drawing board I went and in a completely different direction. Instead of going green, I went with my other favorite part of St Patrick’s Day, starting it with an Irish Cream Coffee! 🙂

Now let’s get to the recipe of deliciousness that ensued!

Irish Cream Chocolate Glazed Donut Ingredients

Irish Cream Donuts Ingredients

  • 2 cups Premium Gold Gluten Free Flour (sifted)
  • ¾ cup sugar
  • 2 tsp baking powder
  • ¼ tsp ground nutmeg
  • 1 tsp salt
  • ½ cup coconut milk
  • ¼ cup irish cream liqueur (or non-alcoholic irish cream for gluten free – see note at bottom of post)
  • 2 eggs (lightly whisked)
  • 2 tbsp butter (melted)
  • cooking spray

Chocolate Irish Cream Glaze Ingredients

  • ½ cup semi-sweet chocolate chips
  • 2 tbsp butter
  • 2 tbsp irish cream liqueur (or non-alcoholic irish cream)

Preheat the oven to 425°F.

Combine the flour, sugar, baking powder, nutmeg and salt in a large bowl.

Add the milk and irish cream.

Add the whisked eggs and melted butter. Combine well.

Coat the donut pan with cooking spray and spoon the mixture into the pan.

Bake for 9-10 minutes.

While the donuts are baking, combine all of the chocolate glaze ingredients in a small bowl.

Microwave on high for 1 minute. Remove and stir immediately to combine.

Remove the donuts from the oven. Allow to cool 5-10 minutes, then dip into the glaze.

After I took my first bite, I literally exclaimed out loud (to myself) “SHUT THE FRONT DOOR, THESE ARE AMAZING!”

I then proceeded over to Instagram to post this picture of the glazed donuts and make the same exclamation because I had to spread the word of this amazing creation immediately!

The picture received twice the “likes” of most pictures I post, so apparently “the people” were as excited about them as I was!

Gluten Free Option: This recipe is gluten-free when non-alcholic Irish Cream is used. Alcoholic Irish Cream Liqueur is debatable whether it’s gluten free or not because it’s made from whiskey, which is made from gluten grains .

You can read this article to learn more. If you don’t usually drink whiskey or Irish Cream and are gluten intolerant, I would recommend substituting it with a non-alcoholic Irish Cream to stay on the safe side.
