Gluten Free Fresh Peach Pie

This fresh peach pie recipe is made with an easy gluten free pie crust and filled with sweet cinnamon sugar peaches for a scrumptious gluten free dessert!

It really doesn’t get much better than a fresh fruit pie on a warm spring day, and now that peaches are in season, it’s the perfect time to whip up this scrumptious peach pie recipe!
Not only is the fresh peach filling fantastic but the vanilla cereal crust is a little bit of sweet, crumbly heaven in your mouth, and it’s gluten free!
I used Nature’s Path’s Crunchy Vanilla Sunrise Cereal to make a crust that is gluten free, flavorful and filled with whole grains!
Gluten Free Peach Pie Recipe Ingredients
- 2 cups Nature’s Path Sunrise Crunchy Vanilla Cereal
- ¼ cup white sugar
- 5 tbsp butter (melted)
- 6 fresh peaches (peeled, pitted & sliced)
- 2 tbsp cornstarch
- ½ tsp ground ginger
- ½ tsp ground cinnamon
- ¼ cup white sugar
- ½ cup brown sugar
- ¼ cup water
Gluten Free Peach Pie Recipe Instructions
Add the cereal to a food processor. Blend until a fine crumb mixture forms.
Add the sugar and melted butter and blend 5-10 seconds.
Press the crumb mixture into a 9″ pie plate.
Place in the refrigerator.
Add the peaches to a large skillet over medium heat. Add the cornstarch, ginger, cinnamon, white and brown sugar.
Pour the water over the top. Toss everything together and allow to cook 2-3 minutes.
Reduce the heat to low, cover and simmer 15-20 minutes or until peaches are tender.
Pour the peaches into the pie crust and place back in the refrigerator for 30 minutes to chill.
Serve the pie on it’s own or with a scoop of vanilla ice cream for some “a la mode” action!
No matter how you serve it, this pie is absolutely delicious. The crumbly vanilla crust combined with the cinnamon ginger peaches are an amazing combination!

We are just north of you in OC and have been in this crazy heat wave too, so nothing sounds better than this peach pie. Well, so do the chocolate chip cookie sandwiches. Can you tell I’m hungry?? Can’t wait to go to the farmer’s market tomorrow to get some fresh peaches and make this for the boys next week.
