Frozen Red Velvet Cheesecake Bars for 4th of July

When it comes to holidays, I always think about my Mom. She loves to decorate, celebrate and bake for every holiday!

Growing up, I was always the kid taking some kind of “holiday themed” treat to school.

I guess you could say that translated to my adult life, because I now feel the need to make a themed treat for every holiday. Well that and the encouragement of the almighty Pinterest! 😉

With 4th of July right around the corner, I began brainstorming all kinds of red, white and blue recipes that I could make for the holiday.

I thought back to the summer of 2013 when I made the oh-so-popular Frozen Strawberry Cheesecake Bars and decided to create a new version of this sweet, refreshing dessert for 4th of July!

Star Shaped Frozen Red Velvet Cheesecake Bars

I started with red velvet cheesecake, then added blueberries and white chocolate chips to give these bars the full red, white & blue treatment!

I cut the bars into stars, and boom, the perfect cool & patriotic treat is ready for the holiday!

Frozen Red Velvet Cheesecake Bar Ingredients

Red Velvet Cheesecake Bars Ingredients

  • 1 ¾ cups Oreo cookie crumbs
  • 5 tbsp butter (melted)
  • 16 oz cream cheese
  • 1 cup powdered sugar
  • ¼ cup milk
  • 1 tsp vanilla
  • 2 tsp cocoa
  • 1 tsp red food coloring
  • ½ cup blueberries
  • ½ cup white chocolate chips

Red Velvet Cheesecake Bars Instructions

Place app ⅔ bag of Oreos into a food processor or blender. Blend until you have 1 ¾ cups cookie crumbs.

Frozen Red Velvet Cheesecake Bar Recipe

Combine the Oreo crumbs and butter in a large bowl.

Press the mixture into the bottom of a 9 x 13 baking dish.

Note: I realized after the fact, that if I parchment lined the baking dish it would have been mush easier to remove the bars from the dish once they are frozen. I highly recommend this 😉

Frozen Red Velvet Cheesecake Bar Recipe

Place in the freezer for 10 minutes.

Combine the cream cheese, powdered sugar, milk, vanilla, cocoa and red food coloring in a large bowl with an electric hand mixer. Blend until creamy.

Frozen Red Velvet Cheesecake Bar Recipe

Hand mix in the blueberries and white chocolate chips.

Remove the crust from the freezer and spread the cheesecake on top.

Frozen Red Velvet Cheesecake Bar Recipe

Place back into the freezer for at least 4 hours.

Remove from the freezer at least 20 minutes before serving to thaw enough to slice through.

Slice into bars, or stars. If using a cookie cutter to slice into stars, I recommend a metal cookie cutter.

White Chocolate Chip Blueberry Red Velvet Cheesecake Bars

Once they’re sliced, serve immediately or place back in the freezer until ready to serve.

Frozen Red Velvet Cheesecake Bars are the perfect sweet treat for summer! Add blueberries & white chocolate chips & cut them into stars for 4th of July fun!

Ingredients

  • 1 ¾ cups Oreo cookie crumbs
  • 5 tbsp butter, melted
  • 16 oz cream cheese
  • 1 cup powdered sugar
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 2 tsp cocoa powder
  • 1 tsp red food coloring
  • ½ cup blueberries
  • ½ cup white chocolate chips

Instructions

  • Place approximately 2/3 bag of Oreos into a food processor or blender.
  • Blend until you have 1 ¾ cups cookie crumbs.
  • Combine the Oreo crumbs and butter in a large bowl.
  • Press the mixture into the bottom of a parchment paper lined 9 x 13 baking dish.
  • Place in the freezer for 10 minutes.
  • Combine the cream cheese, powdered sugar, milk, vanilla, cocoa and red food coloring in a large bowl with an electric hand mixer.
  • Blend until creamy.
  • Hand mix in the blueberries and white chocolate chips.
  • Remove the crust from the freezer and spread the cheesecake on top.
  • Place back into the freezer for at least 4 hours.
  • Remove from the freezer at least 20 minutes before serving to thaw enough to slice through.
  • Slice into bars, or stars. If using a cookie cutter to slice into stars, I recommend a metal cookie cutter.
