I know, I know, who comes up with these national food holidays? Kurt (and I’m sure a few other people) think they’re totally ridiculous, but as a foodie, I love any excuse to celebrate my favorite foods like National Ice Cream Day.  Yes, please!

Watermelon Lime Sherbet Float Recipe

As I was preparing for National Watermelon Day, (yes, I prepare for national food holidays #FoodBloggerLife 😉 ) I realized that I had a delicious watermelon cocktail to share, hello Watermelon Jalapeno Mojitos and a scrumptious entree, give me all the Watermelon Serrano Salsa on top of Chorizo Tostadas, but no watermelon dessert!

I had to remedy this situation immediately. Enter the Watermelon Lime Sherbet Float, AKA the most perfect summer twist on an ice cream float ever!

Watermelon Lime Sherbet Float Ingredients

Ingredients

  • 3 cups fresh watermelon cubes
  • 2 tbsp fresh mint
  • 1 liter lemon lime soda
  • 1.5 quart lime sherbet

Add the watermelon and mint to a blender.

Watermelon Lime Sherbet Float Recipe

Blend until smooth, then transfer to a large pitcher. Add the lemon lime soda to the pitcher slowly.

Add a scoop of sherbet to a Half Pint Mason Jar or small bowl.  Pour the watermelon soda over the sherbet and serve.

Serve with small spoons, decorative straws and a watermelon mint garnish, if you’re fancy like that! 😉
