This one pot ravioli recipe was inspired by one of my favorite meals, One Pot Vegetarian Pesto Tortellini. I absolutely love this dish, so I decided to create a similar dish with a new twist!

One Pot Ravioli with Creamy Pesto Sauce & Sausage is an absolutely mouth watering, delicious recipe that is so easy to make in only 20 minutes!

One Pot Ravioli Ingredients

  • 1 tbsp olive oil
  • 1 cup zucchini (chopped)
  • 4 cloves garlic (minced)
  • 2 cups Italian Sausage (casing removed – sliced or crumbled into large pieces)
  • 9 oz fresh refrigerated cheese raviolis
  • 2 cups vegetable broth
  • 1 tbsp dried oregano
  • ¾ cup sun dried tomato pesto (← click link for homemade recipe)
  • 2 oz cream cheese (cubed)
  • ¼ cup parmesan cheese
  • ¼ cup sun dried tomatoes

One Pot Ravioli Instructions

Heat the olive oil in a large skillet over medium high heat.

Add the zucchini and garlic, cook for 1-2 minutes.

Place the sausage in the skillet and cook 3-4 minutes.

Add the ravioli, vegetable broth and oregano, stir to combine and bring to a simmer.

Cover and reduce heat to low, cook 7-8 minutes.

Add the sun dried tomato pesto, cream cheese and parmesan cheese. Stir until the cheese melts into the dish, allow to cook on low for another 3-4 minutes.

Remove from the heat and top with the sun dried tomatoes.

Ingredients
