A couple of weeks ago I was eating lunch with my boyfriend Kurt and our friend Matt at Souplantation (those guys are obsessed with that place!) and at the end of our meal, Matt put a blueberry muffin in the bottom of a bowl, then topped it with chocolate soft serve.

I thought he was either totally weird or a total genius! Turns out this time, he was a total genius!

Red Velvet Cookies Ingredients

  • 1 ½ cups flour
  • ¼ cup unsweetened cocoa
  • ½ tsp kosher salt
  • 1 tsp baking soda
  • ¼ cup melted butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tbsp red food coloring
  • ½ tsp vanilla
  • 1 tsp white vinegar
  • 1 cup white chocolate chips
  • 1 cup blueberries

Red Velvet Cookies Instructions

Pre-heat the oven to 325°F.

Combine the flour, cocoa, salt and baking soda in a small mixing bowl and set aside.

In a large bowl mix the melted butter, granulated sugar and brown sugar together.

Combine the egg with the other ingredients.

Add the food coloring, vanilla and vinegar.

Add the dry ingredients.

Hand mix in the white chocolate chips and blueberries.

Scoop into large rounded tablespoons and place on a baking stone or parchment lined baking sheet.
