With football season in full swing, I thought it was about time that I “nacho-fy” one of my favorite childhood recipes, sloppy joes!

Nachos, good, sloppy joes, good, Sloppy Joe Nachos, SO GOOD!

One of my favorite parts of eating sloppy joes as a kid was dipping up any of “the sloppiness” that fell out of the sandwich with ruffles potato chips, so instead of tortilla chips I used ruffles to make these sloppy joe nachos!

I created a thick layer of ruffles, in many places the ruffles were overlapping or doubled up to hold up the weight of the sloppy joes. A few of the middle chips got a little soggy after baking the nachos, but the extra layer of chips underneath them were still perfectly crispy to hold everything together.

You can definitely use tortilla chips to make these sloppy joes nachos, but I personally love the ruffles potato chip twist!

Ingredients

  • 1 tbsp olive oil
  • 1 cup red onion (chopped)
  • ½ cup red bell pepper (chopped)
  • ½ cup green bell pepper (chopped)
  • 1 lb ground turkey
  • 2 tbsp taco seasoning (click link for recipe)
  • 2 tbsp hot sauce
  • 6 oz tomato paste
  • 14 oz can diced tomatoes with green chilies
  • ½ cup chicken broth
  • 1 bag (8.5 oz) Ruffles
  • 3-4 cups pepper jack cheese (shredded)
  • ½ cup pickled jalapeños

Optional Toppings

  • Diced Tomatoes
  • Diced Avocado
  • Fresh Cilantro
  • Sour Cream
  • Hot Sauce

Preheat the oven to 400°F.

Heat the olive oil in a large skillet over medium heat. Add the onion and bell peppers, saute 5-7 minutes. Add the ground turkey and cook through.

Drain any grease from the skillet, then return to the stove and add the taco seasoning, hot sauce, tomato paste, diced tomatoes with green chilies and chicken broth. Combine well, reduce heat to low and simmer for 15 minutes.

Spread the ruffles chips evenly on a rectangular baking dish or sheet pan. Top with the sloppy joes, pepper jack cheese and pickled jalapenos.

Pop in the oven for 10 minutes.

Remove from the oven and top with the optional toppings of your choice.
