This morning, I made an appearance on Good Day Sacramento to celebrate this awesome foodie holiday. I shared three of my favorite grilled cheese sandwich recipes, including this new Bacon Tomato Avocado Grilled Cheese sandwich, which I partnered up with my friends at Farmer John to create!
How to make it
To make this cheesy spin on a classic BLT, start by cooking the bacon. I recommend following this guide for how to cook bacon in the oven. Layer it onto buttered bread with shredded gruyere cheese, spinach, tomatoes and avocado.
Cook the grilled cheese sandwich in a large skillet or on a griddle for 3-4 minutes per side, or until golden brown. Serve immediately for ultimate cheesy goodness!

Bacon Tomato Avocado Grilled Cheese
Ingredients
- 4 slices FARMER JOHN® Classic Bacon
- 2 slices bread, sourdough recommended
- 2 tbsp butter
- ½ cup gruyere cheese, shredded
- 2 slices tomato
- ¼ cup fresh spinach leaves
- ½ avocado, mashed
Instructions
- Cook the bacon in a large skillet over medium heat for 8-10 minutes, flipping throughout.
- Remove the bacon from the skillet, cut each slice of bacon in half and set aside.
- Spread 1 tbsp butter on each slice of bread. On the opposite side of one slice of bread, add ¼ cup gruyere cheese, two slices of bacon, tomatoes and spinach leaves.
- Spoon the avocado on top of the spinach, then place the remaining two slices of bacon on top, with the remainder of the gruyere cheese. Place the other piece of bread, butter side facing out, on top of the cheese.
- Heat a large skillet on the stove over medium heat. Once heated, add the grilled cheese sandwich and cook for 2-3 minutes per side.
