Aw grilling season, my favorite time of the year! There’s barely a night that goes by from Spring to Fall where I’m not tossing something on the grill for dinner.

Since I can’t deny a good bowl recipe, (see: Bruschetta Grilled Chicken Zoodle Bowls, Veggie Fajita Rice Bowls, Thai Peanut Sweet Potato Buddha Bowls… and the list goes on!) I decided to add the classic combination of grilled sausage and peppers to a tasty new bowl recipe!

Grilled Sausage Potato Pepper Bowls

Diced red potatoes, bell peppers, jalapenos and garlic are tossed with olive oil, salt, pepper, paprika and cilantro to make a delicious base for the bowl, which is then topped with the scrumptious grilled jalapeno cheddar sausage and shredded cheddar cheese.

The best part about this bowl is that it’s so easy to make in just 29 minutes!

Sausage should be cooked on the grill for 15-20 minutes, flipping halfway through.

Peppers and potatoes go great with grilled sausage. You can also toss some Mexican Street Corn or Creamy Artichoke Stuffed Peppers on the grill to go with grilled sausage.

Grilled Sausage Bowls

Grilled sausage, potatoes and peppers are combined in this delicious summer bowl recipe! It's easy enough to make for a weeknight dinner, great for a BBQ or perfect to take on your next camping trip!

Ingredients

  • 1 lb red potatoes, small dice
  • 4 cloves garlic, minced
  • 1 jalapeno, minced
  • 1 bell pepper, small dice
  • ¼ cup olive oil
  • 2 tsp fresh cilantro, chopped
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 6 oz Jalapeno Cheddar Sausage
  • ¼ cup cheddar cheese, shredded
  • 1 tbsp fresh cilantro, chopped

Instructions

  • Heat a grill to medium.
  • Toss the potatoes, garlic, jalapeno and bell pepper with the olive oil, cilantro, paprika, salt and pepper.
  •  Place in a foil basket on the grill for 20 minutes, tossing every 5-7 minutes. 
  • Place the jalapeno cheddar sausage on the grill. Grill for 15-20 minutes, flipping halfway through.
  • Divide the potato pepper mixture between two bowls. Slice the sausage and place on top of each bowl.
  • Sprinkle with cheddar cheese and cilantro.
