Pasta Boscaiola - Creamy Mushroom & Bacon Sauce

Cook diced bacon in large saucepan for 5-7 minutes

Use a slotted spoon to remove the bacon, then add mushrooms to the bacon grease

Add onion, garlic & thyme to the pan

Add pureed tomatoes & white wine

Bring to a simmer, lower heat and  simmer  for 10-15 minutes.

Add cream & peas to the sauce

Stir everything together, then add the cooked bacon back to the pot

Add cooked pasta and one cup of cooking water from the pasta

Garnish with parsley & parmesan cheese

Easy to make in under an hour & SO delicious!
