When it comes to easy air fryer recipes, there is none easier than this baked potato recipe! 

Potatoes are a nutritions option to include in your diet. They offer protein, fiber, vitamin C, B6 and potassium. With minimal ingredients you can transform a plain spud into something truly delicious!

Load the air fried baked potato with all of your favorite toppings. Keep things simple with butter, salt, and pepper for a side dish, or use heavier toppings like chili to make it a meal!

Instructions

  1. Scrub 2-4 russet potatoes clean, then pierce them all over with a fork. This allows steam to come out of the potatoes as they cook. Rub olive oil all over the potatoes, then sprinkle them on all sides with salt. Place in an air fryer basket. This 5.8 quart air fryer will easily fit two large, 1 pound potatoes or four smaller, 1/2 pound potatoes.
  2. Air fry the potatoes at 400°F for 30 minutes. Open the air fryer and use tongs or an oven mitt to flip the potatoes. Continue cooking for an additional 5-10 minutes, for smaller potatoes, or 15-20 minutes for larger potatoes. Use tongs, or an oven mitt to gently squeeze the potatoes to tell when they’re done and ready to eat. Once the potatoes are tender, remove them from the air fryer and serve.

Pro tips

  • Use tongs, or an oven mitt to gently squeeze the potato to tell if it’s done. If the potato is still firm when squeezed, that means it needs to cook more.
  • Another way to check to see if the baked potato is done is to gently push a knife into the potato, if it glides easily into the center it’s done!
  • If the potato is not quite done, continue cooking in increments of 5 minutes until it is soft to the touch. Cooking time varies depending on the size, larger potatoes will take longer to cook.
  • I do not recommend wrapping the potatoes in foil before air frying them. Wrapping the potatoes in foil means all of the moisture is kept inside and this will steam the potatoes instead of baking them, and you won’t get the wonderful crispy skin that makes these air fryer baked potatoes so great!
  • Always pierce the potatoes with a fork. Just about 10 times is fine. This prevents the potato from bursting as it cooks and leaking out of the skin.
  • While the recipe instructions are for 2 pounds of baked potatoes, you can easily use this recipe to make just one or two baked potatoes, no matter the size.
  • Make sure to dry the potato thoroughly after washing. A water saturated skin will steam instead of crisp.
  • Avoid overcrowding the air fryer. The potatoes need room so the hot air can completely surround them.

Topping ideas

Slice the baked potato in half, mash the inside a little with a fork, and load it up with any of the following toppings.

I love stuffing a baked potato with traditional toppings like cheese and butter, or loading it up with sour cream, green onions and chopped, cooked bacon. Baked potatoes can also be stuffed with chili and so much more. Try any of these topping ideas to stuff your air fryer baked potato.

  • Basic: butter, salt and pepper.
  • Loaded: butter, sour cream, shredded cheddar cheese, green onions or chives, and chopped cooked bacon or bacon bits. To level this loaded potato up, replace the sour cream with French Onion Dip or Roasted Garlic Dip!
  • Chili: heat up your favorite chili and spoon it into the potato, then top with shredded cheddar cheese and diced green onions. (Pictured above.)
  • BBQ: add your favorite BBQ flavored meat, I like this Instant Pot BBQ Chicken, cheddar cheese, and green onions. And if I ever have leftover Smoked Pulled Pork, I also love throwing that in a baked potato with a drizzle of bbq sauce!
  • Cheesesteak: load up the potatoes with cooked beef, provolone, white American cheese, or cheese whiz. Omit the Fritos in this Philly Cheesesteak Frito Pie recipe, and instead, stuff the filling into baked potatoes.
  • Taco: add Carne Asada, Salsa, Guacamole, cotija or pepper jack cheese, onions, and cilantro.
  • Breakfast: load up the potatoes with scrambled eggs, cooked, crumbled sausage or crumbled bacon, veggies, and shredded cheddar cheese.
  • Mediterranean: add Greek Meatballs with Tzatziki Sauce, hummus, feta cheese, and olives.
  • Broccoli cheddar: top the potatoes with steamed or roasted broccoli and cheddar cheese, or cheese sauce.
  • Chicken alfredo: fill the potato with Instant Pot Shredded Chicken, then pour on your favorite Alfredo sauce.
  • Pizza: add tomato sauce, mozzarella cheese, and all your favorite pizza toppings, like pepperonis, mushrooms, or bell peppers.

How to store and reheat

  • Store: Keep cooked potatoes in an airtight container in the refrigerator for up to 5 days.
  • Freeze: You can also seal the leftovers in a freezer-safe airtight container and freeze for up to 6 months.
  • Reheat: To reheat baked potatoes, you can use the microwave or put them back in the air fryer. I recommend 2 minutes in the microwave or 5 minutes in the air fryer at 400°F.

  • 1 tablespoon olive oil
  • ½ teaspoon salt
