This cheeseburger dip combines two of my favorite things, queso and buffalo sauce! If you’ve ever visited my blog before, you know about my obsession with buffalo sauce. I’ve shared dozens of recipes with buffalo sauce over the years. Some of the fan favorites include:

And today a new favorite is added to that list. I’ve been serving this dip at parties since 2015 and it’s always a HUGE HIT! Luckily it’s also super easy to make in just 15 minutes! Serve it with chips or veggies for dipping and you’ve got yourself an award-winning game day dip.

Ingredients

  • Olive oil
  • Onion
  • Garlic cloves
  • Ground beef
  • Chili powder
  • Black pepper
  • Kosher salt
  • Buffalo sauce – for this recipe I use 1 cup of buffalo sauce so that the flavor really shines through. If you want a more mild dip, with less buffalo flavor, feel free to use 1/2 cup sauce. I like Frank’s Buffalo Sauce, but feel free to use your favorite brand of sauce.
  • Diced tomatoes with green chilies – feel free to use Rotel or a store brand of canned tomatoes. Do not drain the canned tomatoes, you will want to use the entire contents of the can in the dip.
  • Cream cheese
  • Cheddar cheese

Step by step instructions

  1. Cook ground beef with onions and garlic. Pour olive oil into a large skillet, or dutch oven, on the stove over medium-high heat. Add diced onions, saute for 4-5 minutes, then add the minced garlic and saute for an additional minute. Add the ground beef and cook for 7-8 minutes, or until cooked through and no longer pink.
  2. Season the beef. Once the beef is cooked through, drain any grease from the skillet, then add chili powder, salt, pepper and buffalo sauce.
  3. Add the tomatoes. Add an entire can of diced tomatoes with green chilies. Do not drain the can, add the entire contents to the skillet. Stir to combine everything.
  4. Add the cheese. Add cubed cream cheese and shredded cheddar cheese to the skillet. Stir continuously until the cheese is melted and begins to bubble. Transfer to a bowl and serve with chips for dipping.

How to make it in a slow cooker

If you want to keep the dip warm throughout a party, feel free to make it in a slow cooker. I like to use this 2.5 quart mini Crock Pot for dips. Follow the steps below to make the dip in a crock pot.

  1. Cook and season the ground beef, following the first 3 steps above, then transfer it to a slow cooker.
  2. Add the cubed cream cheese and shredded cheddar cheese to the slow cooker.
  3. Place the lid on the slow cooker, set it to low and cook for 30 minutes. Remove the lid and stir the dip.
  4. Replace the lid and continue to cook the dip on low for 30 minutes – 1 hour. Remove the lid and stir the dip again.
  5. Change the temperature on the slow cooker to warm.
  6. The dip can stay in the slow cooker on warm for up to 4 hours.

You can also prepare the entire dip on the stove, then transfer it to a slow cooker. Set it to warm and leave it in the slow cooker for up to 4 hours.

What to serve with the dip

Tortilla chips are perfect for dipping up the creamy goodness of this buffalo cheeseburger dip. You can also serve it with crackers, potato chips, carrots, celery or bell peppers for dipping.

  • Can you add bacon to the dip? Of course! To make Bacon Cheeseburger Dip, stir in 1/2 cup cooked, crumbled bacon to the dip once the cheese has melted in the skillet.
  • Can you double the recipe? Absolutely and for a party, I’d definitely recommend it because this dip is sure to go quick! In the recipe card below, you’ll see the serving amount is set to 6. If you’d like to double the recipe, simply hover over the servings and adjust it from 6 to 12. The ingredient amounts in the recipe card will automatically update to the new serving size.
  • How long will leftovers last in the refrigerator? Leftover dip should be stored in a sealed, airtight container and will last in the refrigerator for up to 5 days.

Buffalo Cheeseburger Dip
