Gluten Free Blueberry Oatmeal Bars

Starbucks Blueberry Oatmeal Bars are recreated in this easy gluten free recipe. These Oatmeal Bars are a delicious treat, great for breakfast or a sweet snack!
I originally shared this recipe 5 years ago and these delicious bars have been a hit ever since!
My brother was diagnosed with celiac disease in 2011. At that time he asked me to transform some of his favorite foods into gluten-free recipes.
Over the years, I’ve made him Gluten Free Orange Chicken and Gluten Free General Tso’s Chicken. These were a couple of his Chinese food favorites that he couldn’t eat anymore after going gluten free.
I’ve also made him Gluten Free Nutella Brookies and Gluten Free Peanut Butter Chocolate Cupcakes. These sweet treats are perfect for birthdays, holidays and fulfilling any chocolate cravings!
Back in college, he used to work at Starbucks and loved their Blueberry Oat Bars. So of course I created a gluten free version for him! I served these oatmeal bars at his baby shower and always make them when he’s visiting me in San Diego.
They’re sweet enough to be a dessert and really delicious when topped with a scoop of vanilla ice cream! They’re also filled with so many vitamin-packed blueberries, you could totally get away with eating them for breakfast!
It’s a super easy recipe that can be prepped in just 15 minutes!
How to make Oatmeal Bars from scratch
Combine flour, brown sugar, rolled oats, baking powder and sea salt in a large mixing bowl. Add cold butter and mix with your hands to form a crumbly mixture.
Press the mixture into a buttered 9″x13″ baking dish. Spread blueberries across the oat mixture.
In a small mixing bowl, combine flour, brown sugar and ground cinnamon. Add cold butter and mix into a coarse crumble, then sprinkle over the blueberries.
Place in an oven, preheated to 350°F and bake for 45 minutes. Remove from the oven and allow to cool completely, at least 30 minutes, before cutting into bars.
Can frozen blueberries be used in this recipe?
Yes. Fresh or frozen blueberries can be used in this recipe.
I recommend stocking up on fresh blueberries when they’re in season and affordable. They can then be placed in the freezer and stored for up to one year.
Can you use other berries in this recipe?
Sure! Blackberries, raspberries or strawberries can all be used in this recipe. You can also mix them up to make mixed berry oatmeal bars!
In the fall and winter, I also make Apple Oatmeal Bars and Cranberry Oatmeal Bars. Both of these recipes were inspired by these blueberry oatmeal bars. They’re just as delicious and a fun seasonal treat!
How do you store these Blueberry Oatmeal Bars?
The bars can be left on the counter at room temperature for up to 24 hours. After that, I recommend moving them to the refrigerator where they can be stored for up to 5-6 days.

Gluten Free Blueberry Oatmeal Bars
Ingredients
- ¾ cup gluten free flour
- 1 cup brown sugar, divided
- 2 cups oats
- ½ tsp baking powder
- ½ tsp sea salt
- ¾ cup butter
- 3 cups blueberries
Brown Sugar Crumble
- 2 tbsp gluten free flour
- 1/3 cup brown sugar
- ½ tsp cinnamon
- 1 tbsp butter
Instructions
- Preheat the oven to 350°F.
- Combine ¾ cup flour, 1 cup brown sugar, oats, baking powder and sea salt together in a large bowl.
- Add ¾ cup butter (cold & cubed) and mix with your hands to form a crumbly mixture.
- Press the mixture into a buttered 9 x 13 baking dish.
- Spread the blueberries over the top.
- Combine the remaining 2 tbsp flour, 1/3 cup brown sugar and ½ tsp cinnamon in a small bowl.
- Add the remaining 1 tbsp butter, mix into a course crumble and sprinkle over the blueberries.
- Bake for 45-50 minutes.
- Allow to cool at least 30 minutes before slicing into bars.

I made this recipe but the top never browned! I’m wondering why?
Can this be frozen?
Hi Carrie, yes, you can freeze them individually and easily defrost one at a time in the microwave, or freeze an entire batch and defrost it in the refrigerator for 1-2 days before eating.
Made with buckwheat flour and dairy free butter. Delicious!

does the type of oat matter? I.e steel cut vs rolled
Hi Britt, I use and recommend rolled oats for this recipe.
I tried with steel, and they were not quite moist enough and too crumbly to form bars
