To make these chicken skewers, I headed to my local Vons and grabbed an assortment of O Organics® products. From hummus to chicken, and olive oil to spinach,Organics products, available in my area exclusively at Vons, make it easy and affordable to eat organic in the new year.

I always keep my fridge loaded up with Organics hummus for healthy snacking. The flavor of the different varieties of hummus is fantastic and perfect for dipping up with carrots or celery as an afternoon snack!

I combined the fresh spinach with a variety of spices, fresh lemon juice and olive oil to create a scrumptious marinade for these Mediterranean Chicken Skewers.

I then grilled the skewers and served them with a variety of O Organics Hummus flavors. You can scoop the hummus right over the skewers or serve it on the side for dipping.

The flavor of the chicken is so delicious and I love it paired with the roasted garlic hummus!

You can serve the skewers by themselves as a snack or party app, pair them with rice or a spinach salad for dinner, or wrap the Mediterranean chicken up in pita bread with hummus, spinach and tomatoes for a delicious lunch! I’ve already made this recipe twice this week and eaten it each way!

Mediterranean Chicken Skewers

Fresh spinach, spices, lemon and olive oil are combined in an amazing marinade for these grilled Mediterranean Chicken Skewers! 

Ingredients

  • 2 cups packed baby spinach
  • 4 cloves garlic
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • ¼ cup lemon juice
  • ½ cup olive oil, extra virgin
  • 2 lbs boneless, skinless chicken breast, cubed
  • 1 cup hummus

Instructions

  • Add the spinach, garlic, paprika, cumin, cinnamon, nutmeg, salt, black pepper, cayenne pepper, lemon juice and olive oil to a blender or food processor.
  • Turn on and puree until smooth.
  • Turn the blender off and pour the mixture into a large ziplock bag, add the chicken to the bag and toss together.
  • Marinate for at least 30 minutes.
  • Remove the chicken from the bag and skewer 6-8 pieces of chicken on 6 skewers. *If using wood skewers, be sure to soak in water for an hour before using.
  • Grill the chicken skewers over medium heat for 5-7 minutes per side.
  • Serve with hummus on the side for dipping.
