I am SUPER EXCITED to share this post today for three reasons:

  1. I’m totally obsessed with espresso.
  2. I’m on a mission to start making my own iced coffee at home.
  3. I’ve had a lot of espresso so I’m just really excited about pretty much everything right now, lol!

I don’t know about you, but I have a not-so-secret love affair going on with coffee. Iced coffee, espresso, cappuccino, frappuccino, I want them all!

When I was in my mid-to-late 20s and living those early food blogger days (AKA ballin’ on a budget!) I remember thinking that some day I wanted to be able to order dessert and espresso at the end of a dinner out. I know, I know, reach for the stars, Whitney, lol!

Some people want to make more money to buy Range Rovers and diamond rings, I just want to buy espresso and cheesecake! 

I can now proudly say that I order espresso and dessert after dinner on a regular basis… I’ve made it y’all! 

But now I’ve gone past just wanting espresso after dinner. I want it in the morning, the afternoon, before dinner! Let’s just say if cars run on gas, Whitney runs on coffee!

I started doing some research online and I found this Capresso Mini Espresso Maker. It was affordably priced at $69.95, compared to other espresso machines priced from $400-$500, and it was very highly reviewed!

I ordered it, received it, read through the instructions and before I knew it, I had a cup of espresso sitting in front of me! I took a sip, and it this is what happened ↓

 

Yes, I was very proud of myself and my “adulting”. I’m pretty sure I posted half a dozen videos of  me making, drinking & being really super excited about espresso on my Instagram story yesterday!

While I love my espresso shots for quick pick-me-ups, I’m an iced coffee every morning kind of girl. Living in San Diego, there are very few days out of the year that are cold enough to give me the strong desire to drink a giant cup of hot coffee in the morning.

After getting fed up with spending $6 a day on cold brew, I decided to figure out how to make my own iced coffee at home. Yes, you can make a pot of coffee and put it in the refrigerator and eventually it will be cold, but what about when YOU NEED COFFEE RIGHT NOW!!

Enter: Espresso.

The problem with icing down regular coffee immediately is that it waters down the coffee. And if you’re not getting all the caffeine, what’s the point? (Don’t even get me started on decaf!  😉 )

Espresso is highly caffeinated, therefore adding ice and milk to it immediately will water it down, close to a “normal” caffeine level for iced coffee.

Add your favorite flavors, such as Mocha & Coconut with Torani syrups and serve it over ice, or blend it up, for a “frappuccino” style drink!

Prepare the espresso according to the machines instructions. (I promise it’s super simple, like made in 3 minutes simple!)

Divide the espresso between two mugs, then add the coconut milk, coconut syrup and chocolate sauce, stir to combine, then add the ice.

Serve as an iced latte, or pour the latte and ice in a blender and mix it up for a frappuccino style drink.

Ingredients

  • 8 oz espresso
  • ½ cup coconut milk
  • 1 tbsp coconut syrup
  • 2 tsp dark chocolate sauce
  • ice

Instructions

  • Prepare the espresso according to the machines instructions.
