One Pot Chicken Fajita Pasta

In one pot and only 29 minutes, prepare a delicious chicken fajita pasta dish that will easily become a weeknight family favorite!
I feel like this pasta recipe is my Mona Lisa, the dish that took me three months to perfect, but now it’s a masterpiece!
I tried spaghetti noodles, penne pasta and pasta shells, I used various amounts of hot sauce, chicken broth and spices, I used diced chicken, sliced chicken and ground chicken, but I did not give up until the perfect One Pot Chicken Fajita Pasta was created, and now here it is, in all it’s glory!
I can now say that I created the Mona Lisa of One Pot Chicken Fajita Pastas!
Can I get a plaque or trophy or something?! I can see it now, I’m standing on stage at “The Foodies” (a totally made-up food blogger award show similar to The Oscars) accepting my “Mona Lisa” award for One Pot Chicken Fajita Pasta. Hahaha!
I should probably quit typing before I admit how much I actually have thought about this made up food blogger award show and receiving an award, much like I planned on receiving a Grammy as a little girl, until I entered a talent show, played back the video and heard myself sing, eeeeeekkkk!
It’s a good thing I picked up cooking at a young age, that seems to have worked out much better for me! 😉
Without further ado (or rambling!) let’s make this now infamous One Pot Chicken Fajita Pasta!
One Pot Chicken Fajita Pasta Ingredients
- 2 tbsp olive oil
- 2 cups bell pepper (diced)
- 1 cup red onion (diced)
- 2 cloves garlic (minced)
- 1 lb ground chicken breast
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp sea salt
- ¼ cup hot sauce
- 1 can (14.5 oz) diced tomatoes with green chilies
- 2 cups macaroni noodles
- 1 ½ cups chicken broth
- 1 cup pepper jack cheese
One Pot Chicken Fajita Pasta Instructions
Pour the olive oil into a large pot or dutch oven over medium high heat. Add the bell pepper, onion, garlic and chicken, cook 7-8 minutes, or until chicken is cooked through.
Add the cumin, chili powder, paprika, sea salt, hot sauce and can of diced tomatoes with green chilies. Stir to combine.
Add the macaroni noodles and chicken broth to the pot. Cover, reduce heat to low and simmer 15 minutes. Open and stir, cover and cook for an additional 5 minutes. Remove the lid and add the pepper jack cheese. Stir to combine and serve.
Easy as that, a delicious dinner, some might say the “Mona Lisa” of dinners, is served!

One Pot Chicken Fajita Pasta
Ingredients
- 2 tbsp olive oil
- 2 cups bell pepper, small dice
- 1 cup red onion, small dice
- 2 cloves garlic, minced
- 1 lb ground chicken breast
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp sea salt
- ¼ cup hot sauce
- 14.5 oz can diced tomatoes with green chilies
- 2 cups macaroni noodles, uncooked
- 1 ½ cups chicken broth
- 1 cup pepper jack cheese, shredded
Instructions
- Add the olive oil to a large pot or dutch oven over medium high heat.
- Add the bell pepper, onion, garlic and chicken, cook 3-4 minutes, or until chicken is cooked through.
- Add the cumin, chili powder, paprika, sea salt, hot sauce and can of diced tomatoes with green chilies, stir to combine.
- Add the macaroni noodles and chicken broth to the pot.
- Cover, reduce heat to low and simmer 15 minutes.
- Open and stir, cover and cook for an additional 5 minutes.
- Remove the lid and add the pepper jack cheese.
- Stir to combine and serve.
