One Pot Ravioli with Creamy Pesto Sauce & Sausage is an absolutely mouth-watering recipe that is so easy to make in only 20 minutes!
A big ol’ pot of cheesy pasta, Italian sausage and veggies in a deliciously creamy sun dried tomato pesto sauce, does life get any better?! I don’t think so!
This one pot ravioli recipe was inspired by one of my favorite meals, One Pot Vegetarian Pesto Tortellini. I absolutely love this dish, so I decided to create a similar dish with a new twist!
This dish is so creamy, flavorful and comforting! I know you’ll be adding this One Pot Ravioli recipe to your weekly menu!
One Pot Ravioli Ingredients
- 1 tbsp olive oil
- 1 cup zucchini (chopped)
- 4 cloves garlic (minced)
- 2 cups Italian Sausage (casing removed – sliced or crumbled into large pieces)
- 9 oz fresh refrigerated cheese raviolis
- 2 cups vegetable broth
- 1 tbsp dried oregano
- ¾ cup sun dried tomato pesto (← click link for homemade recipe)
- 2 oz cream cheese (cubed)
- ¼ cup parmesan cheese
- ¼ cup sun dried tomatoes
One Pot Ravioli Instructions
Heat the olive oil in a large skillet over medium high heat.
Add the zucchini and garlic, cook for 1-2 minutes.
Place the sausage in the skillet and cook 3-4 minutes.
Add the ravioli, vegetable broth and oregano, stir to combine and bring to a simmer.
Cover and reduce heat to low, cook 7-8 minutes.
Add the sun dried tomato pesto, cream cheese and parmesan cheese. Stir until the cheese melts into the dish, allow to cook on low for another 3-4 minutes.
Remove from the heat and top with the sun dried tomatoes.
Top with a little fresh chopped basil if you’d like and dig in!

Ingredients

Instructions

- Add the sundried tomato pesto, cream cheese and parmesan cheese, stir until the cheese melts into the dish, allow to cook on low for another 3-4 minutes.
- Remove from the heat and top with the sun dried tomatoes.
