One Pot Tuscan Shrimp Scampi Pasta

I love one pot meals! You love one pot meals! Guess what? Today I’ve got a meal for you that requires four pots, just kidding, it’s a totally delicious and super simple one pot meal that I know you’re going to love!
One pot meals are in regular rotation on the blog these days. I just can’t get enough of this One Pot Buffalo Taco Spaghetti, One Pot Italian Sausage Shells and Cheese or One Pot Kimchi Fried Rice!
Today’s one pot recipe is inspired by the flavors of Tuscany!
Olive oil, garlic, lemon, tomatoes, and salt are staple ingredients in the region. Add these ingredients to pasta cooked in white wine with shrimp and you have one seriously flavorful dish made with simple, delicious ingredients!
One Pot Shrimp Scampi Ingredients
- 1 tbsp olive oil
- ½ cup onion (diced)
- 4 cloves garlic (minced)
- 1 small serrano chile (thinly sliced)*
- ½ cup white wine (I recommend chardonnay)
- 1 cup fresh diced tomatoes
- 2 tbsp fresh lemon juice
- 2 tbsp fresh basil (chopped)
- 2 tbsp fresh Italian parsley (chopped)
- 1 tsp sea salt
- 1 tsp ground black pepper
- ½ lb spaghetti noodles
- 2 ½ cups chicken broth
- 16 large shrimp (peeled & deveined)
- ¼ cup fresh parmesan (grated)
*The serrano chile definitely adds a little spicy heat to the dish, you can omit it if you’d like no heat, or use ½ tsp red pepper flakes instead for less heat.
One Pot Shrimp Scampi Instructions
Add the olive oil to a large pot or dutch oven over medium heat. Once the oil is hot, add the onion, saute 4-5 minutes. Add the garlic and serrano chile, saute for an additional 1-2 minutes, then add the white wine.
Simmer for 1-2 minutes, then add the diced tomatoes, lemon juice, basil, parsley, salt and pepper.
Break the spaghetti noodles in half, then add to the pot.
Pour the chicken broth over the noodles. Mix everything together and bring to a boil.
Reduce heat, cover and cook for 12 minutes.
Remove the lid and add the shrimp.
Place the lid back on the pot and cook for an additional 3-4 minutes.
Serve the shrimp scampi pasta topped with fresh grated parmesan cheese.
There’s so much flavor in this dish from all of the fresh ingredients! And adding a dash of wine to a recipe never hurt! 😉

- 16 large shrimp, peeled & deveined
- ¼ cup fresh parmesan cheese, grated
Instructions
