Teriyaki Pineapple Baked Chicken

Now you have some options for how to serve your delicious Pineapple Teriyaki Baked Chicken.

The first time around, I placed the chicken breast whole on a bed of cilantro white rice with a couple slices of the pineapple.

I then saved the two additional chicken breasts to eat as leftovers and had the great epiphany to shred the chicken and dice the pineapple, then place it on top of the rice to make a chicken and rice bowl.

I loved the rice bowl option, but I also tried placing the chicken and rice in lettuce wraps and loved that as well!
