The best part about these totally adorable and scrumptious treats, is that they’re also easy to make! Simply mix up the cookie dough, press it in a mini muffin tin and bake, then use the end of a spatula to press the cookie into a cookie cup and fill with cream cheese frosting!
Voila! Easy as that you have a totally adorable treat for Valentine’s Day, birthday parties or Mondays, because Mondays are hard and you deserve a cookie cup with your morning coffee on a Monday! 😉

Red Velvet Cookie Cups
Ingredients
Red Velvet Cookie Cups
- 1 ½ cups flour
- ¼ cup unsweetened cocoa
- ½ tsp kosher salt
- 1 tsp baking soda
- ¼ cup butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg
- 1 tbsp red food coloring
- ½ tsp vanilla
- 1 tsp white vinegar
Cream Cheese Frosting
- 16 oz cream cheese , softened
- ½ cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
Red Velvet Cookie Cups
- Preheat the oven to 350°F.
- Combine the flour, cocoa, salt and baking soda in a small mixing bowl and set aside.
- In a large bowl cream the butter, granulated sugar and brown sugar together.
- Add the egg and mix well.
- Add the food coloring, vanilla and vinegar and mix well.
- Add the dry ingredients and combine.
- Grease two 24 cup mini muffin tins with cooking spray.
- Fill the cups ¾ full with cookie dough.
- Place in the oven and bake for 13 minutes.
- After removing the cookie cups from the oven, use the end of a mixing spoon or spatula to make an indentation in the middle of the cookie cups.
- Let cool for 5 minutes, move to a cooling rack and let cool completely.
Cream Cheese Frosting
- Add all of the cream cheese frosting ingredients to a large bowl and cream together with an electric hand mixer.
- Transfer the cream cheese frosting to a large ziploc bag.
- Cut a small hole in the corner of the bag and pipe the frosting into each of the red velvet cookie cups.
