Sriracha Candied Bacon Grilled Cheese

What better way to kick off National Grilled Grilled Cheese Month than with a Sriracha Candied Bacon Grilled Cheese!
Yes, the entire month of April is dedicated to sandwiches of melty, gooey cheese, layered between buttery toasty bread! April basically rocks.
This picture makes me want to cry tears of sweet, sweet joy because this sandwich is that good!!!
As I was checking out at Trader Joe’s a couple of months back, I saw a new item sitting on the checkout stand. Sriracha Candied Bacon Jerky… SAY WHAT?!?
I’d made candied bacon before after a magical experience at last years Easter brunch, but never had I thought of adding one of my other favorite ingredients, Sriracha, to the amazingness that is candied bacon.
Obviously I immediately went home and made Sriracha Candied Bacon. I then began to brainstorm recipes for which I could add this amazing new discovery to!
With National Grilled Cheese Month coming up and a Cabot Cheese delivery featuring Smoky Bacon Cheddar, I knew that a grilled cheese must be made!
Sriracha Candied Bacon Grilled Cheese Ingredients
- 12 slices thick cut bacon
- 2 tbsp sriracha
- ½ cup brown sugar
- 2 cups bacon cheddar cheese (grated)
- 8 slices sweet hawaiian bread
- 8 tbsp butter
Sriracha Candied Bacon Grilled Cheese Instructions
Preheat the oven to 400°F.
Place the bacon in a plastic bag, add the sriracha and toss to coat.
Add the brown sugar to the bag and toss to coat.
Remove the bacon from the bag and lay the bacon strips across a wire rack on top of a foil-lined baking sheet.
Place in the oven for 20 minutes.
Remove the bacon from the oven and allow to cool for 10 minutes.
Meanwhile, begin preparing the sandwiches. Spread 1 tbsp of butter on one side of each slice of bread.
Flip the bread over and place ¼ cup of cheese on half of the slices. Place 3 slices of bacon on top of the cheese.
*If you’re feeling crazy, you can also drizzle a little extra sriracha on top of the bacon!
Place ¼ cup of cheese on top of the bacon on each slice of bread.
Sandwich the other 4 slices of bread over the cheese.
Place each sandwich in a hot skillet over medium heat and grill for 5 minutes per side, or until golden brown.
Remove from the stove, slice in half and serve.
It’s sweet, spicy, salty, melty, gooey, buttery, crunchy perfection in the form of a grilled cheese sandwich!
Now all I have to do it come up with 364 other recipes featuring Sriracha Candied Bacon so that I can eat it every day of the year! 😉
