I’m being totally serious when I tell you that this is the worlds best Cajun chicken marinade! Whether you’re looking for a healthy Whole30 recipe or not, you’re going to want to make this recipe.

To make the worlds most delicious cajun chicken marinade, you simply whisk together olive oil, lemon juice, apple cider vinegar, hot sauce and Cajun seasoning. For this recipe, you’ll use half of the marinade for the chicken and half as a dressing for the bell pepper slaw.

After making the marinade, all that’s left to do is marinate and grill the chicken and toss together the slaw. Easy to make and great for meal-prepping!

Step by step instructions

  1. Prepare the marinade. Combine olive oil, lemon juice, apple cider vinegar, hot sauce and cajun seasoning in a medium bowl.
  2. Marinate the chicken. Pour half of the marinade into a large plastic bag with the chicken. Toss to coat and place in the refrigerator to marinate for up to 8 hours, I would recommend at least 30 minutes.
  3. Mix the slaw dressing. Combine the remainder of the marinade with olive oil and stone ground mustard and set aside.
  4. Prepare the slaw. In a large bowl, combine the celery, carrots and bell pepper, pour the slaw dressing into the bowl and toss to combine. Place in the refrigerator until ready to serve. 
  5. Cook the chicken. Remove the chicken from the marinade and place on a grill over medium heat for 10-12 minutes per side.
  6. Enjoy! Once the chicken is grilled, slice and serve with the cajun slaw.

Frequently asked questions

  • How spicy is it? While this cajun chicken marinade does contain hot sauce and red pepper flakes, it’s on the mild to medium side, depending on your tolerance for spice. You can always reduce or omit the red pepper flakes to make it less spicy.
  • How can I grill chicken without a grill? There are a couple good options for grilling chicken indoors. An indoor grill is a great small kitchen appliance that can be used year-round. A grill pan is another great option that can be easily be used on your stovetop.
  • How long does grilled chicken last in the fridge? It is best to eat leftover cooked chicken within 3-4 days. Store it in an airtight container in the refrigerator.

Grilled Cajun Chicken with Bell Pepper Cajun Slaw

This recipe features the best cajun chicken marinade ever, that just so happens to also be dairy free, gluten free and Whole30! Grill the chicken up and serve it with Bell Pepper Cajun Slaw for a healthy, complete meal.

Ingredients

  • ¼ cup + 1 tbsp olive oil, divided
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Tabasco hot sauce
  • 2 tablespoons cajun seasoning
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon stone ground mustard
  • ½ cup celery, diced
  • ½ cup carrots, shredded
  • 1 cup bell pepper, thinly sliced

Instructions

  • Combine the ¼ cup olive oil, lemon juice, apple cider vinegar, hot sauce and cajun seasoning in a medium bowl to create the marinade and slaw dressing.
  • Pour half of the marinade (app ¼ cup) into a large plastic bag with the chicken. 
  • Toss to coat and place in the refrigerator to marinate for up to 8 hours, I would recommend at least 30 minutes.
  • Combine the remainder of the marinade with the remaining 1 tbsp olive oil and 1 tbsp stone ground mustard to create the slaw dressing and set aside.
  • In a large bowl, combine the celery, carrots and bell pepper, pour the slaw dressing into the bowl and toss to combine. Place in the refrigerator until ready to serve. 
  • Remove the chicken from the marinade and place on a grill over medium heat for 10-12 minutes per side.
  • Once the chicken is grilled, slice and serve with the cajun slaw
