Creating vegetable noodles with a spiralizer is one of my favorite ways to make healthy recipes!
I’ve made zucchini noodles for several popular recipes. These Bruschetta Grilled Chicken Zoodle Bowls are always a hit! And this Vegan Pad Thai with Zoodles is a fun twist on a classic Thai dish.
I’ve also made butternut squash noodles to go in these Balsamic Chicken Butternut Squash Noodle Bowls.
Sweet potatoes were my first vegetable noodle to make with a spiralizer. I made them and created this Italian casserole dish. The casserole features layers of sweet potato noodles, Italian seasoned ground turkey and fresh mozzarella cheese. It’s a winning combo of flavors. It’s healthy and easy to make!
How do you make easy sweet potato casserole?
To make this Italian sweet potato casserole, start by cooking onions, bell pepper, garlic and ground turkey together on the stove. Add Italian seasoning and diced tomatoes, then simmer.
Make sweet potatoes noodles using a spiralizer, then add them to the skillet with the ground turkey. Top with fresh mozzarella cheese, then transfer to the oven and bake at 350 degrees for 30 minutes.
Is this Italian Casserole healthy?
This Italian casserole recipe is under 500 calories per serving and 32 carbs per serving. It provides 42 grams of protein, 311% daily Vitamin A needs and 77% daily Vitamin C needs. Low in calories and high in vitamins, this recipe is a great healthy option to add to a balanced diet.

Yes. Spiralized sweet potatoes can be kept in a ziplock bag or plastic container in the refrigerator for 3-5 days.
How do you make sweet potato noodles without a spiralizer?
If you don’t have a spiralizer, you can use a vegetable peeler to make sweet potato noodles. A julienne vegetable peeler will work best, but any peeler will work.
For this recipe, you can also dice the sweet potatoes instead of spiralizing them.
Is sweet potato casserole gluten free?
This sweet potato casserole is gluten free. To make the casserole dairy free, omit the mozzarella cheese. Bake covered the entire 30 minutes instead of baking uncovered for the last 15 minutes.

Can this be frozen and reheated later?
Hi Stacy, it definitely can be. My only recommendation would be to add fresh cheese, if possible!
Tasty and healthy! I used crinkle-cut sweet potatoes from the produce aisle (made for french frying).
So glad you enjoyed it Lise! And I love your substitute for the sweet potato noodles, what a great idea! Thanks for sharing!
This is one of my go to recipes, easy to make and healthy with flavor. I may have this mixed up with another recipe but I thought the seasoning/spices for this was different than what is now here – did it change recently?
Hi Angela, I did recently update the recipe and added new photos. I’ve been asked a lot to simplify the ingredient lists in recipes so I try to do that whenever possible. If you prefer the previous recipe, it called for 1 tsp dried oregano, 1 tsp dried parsley, 1/2 tsp fennel seeds and 1/4 tsp red pepper flakes and 2 tbsp fresh basil instead of using an Italian Seasoning. So glad you’re enjoying the recipe!
Great recipe! It was subtly sweet and incredibly tasty. I do think that it needs salt and pepper though.
Please keep the spiralizer recipes coming–I love mine, but I’m looking for more ideas besides zoodles and pasta sauce (although that is def delicious).
I made this for dinner tonight and it was scrumptious!! I do not have the fancy spiralizer so I just made match sticks with the peeled sweet potatoes and it worked well. I cut the potatoes in circles and then cut the circles into sticks. I will definitely be making this again. My family really enjoyed it and it was a great way to get in some good veggies. I like to try new, healthy things for dinner and this was a great recipe. Thank you Whitney! : )
Thank you so much for sharing Monica! I’m so glad that you and the family enjoyed the recipe!
Looks amazing! If you don’t have a spiralizer, could you grate the sweet potatoes?
Great recipe, thanks! I used ground pork instead of turkey and it was delicious.
How do you think it would be if you dropped a couple eggs in to cook where the mozzarella is before baking? Kind of like an “eggs in purgatory”? 🙂
I have the same spiralizer and I am OBSESSED with it! I haven’t tried sprializing sweet potatoes yet though so I’m so excited to try this recipe!
Just bought a spiralizer last week! I made zoodles but was searching for a way to make something with sweet potatoes. So excited to find this, I will be making it soon!
Thanks so much Jennifer!! Can’t wait to hear what you think after you make it!
Wanted to make sure to come back and let you know I made this for dinner and it was awesome 🙂 Husband and kids ate it too….we didn’t have any leftovers!
So awesome! Thanks for sharing Jennifer! I’m so glad the whole family enjoyed it 🙂
