Sweet Potato Pierogies

In this easy pierogies recipe, wonton wrappers are filled with leftover mashed potatoes, then pan seared with caramelized onions for a delicious meal!
Thanksgiving is just a few days away, but I’m already planning for what to do with all of the leftovers!
Since there’s only so many turkey sandwiches I can eat, over the years I’ve come up with several different recipes perfect for repurposing your Thanksgiving leftovers!

My boyfriend Kurt grew up in Pennsylvania with German roots, so he ate a lot of pierogies growing up. I grew up in Oklahoma with southern roots, so I grew up eating a lot of fried chicken and not a lot of pierogies. Since we’ve been dating, pierogies with caramelized onions, is one of the dishes that Kurt makes regularly, and I absolutely love them!
As I was thinking of ways to repurpose my leftover Mashed Sweet Potatoes from Thanksgiving, I decided to make this Sweet Potato Pierogies recipe.
While I used leftover Mashed Sweet Potatoes for this recipe, any kind of leftover mashed potatoes would work!
Ingredients
- 1 package square wonton or ravioli wrappers
- 1 cup leftover mashed potatoes (sweet or traditional)
- 4 tbsp butter
- 1 cup onion (sliced)
- 1 tsp brown sugar
Use a 4” round pastry cutter to cut the wrappers into large circles.
Brush the edges of each circle with water. Place a spoonful of mashed potatoes in the middle of each circle.
Fold over and press the edges together to seal.
Add the butter to a large skillet over medium heat. Once the butter is melted, add the onion and saute 2-3 minutes, sprinkle the brown sugar over the onions and saute for an additional 6-8 minutes. Add the pierogies to the skillet with the caramelized onions, 5-6 at a time and brown lightly on each side for 3-4 minutes.
Serve the sweet potato pierogies with the caramelized onions.
Easy as that, you have a delicious meal, made with leftover mashed potatoes!

Ingredients
