Pistachio Bacon Crusted Scallops

Surf and turf was the name of the game for Sunday Family Dinner this week and Scallops and Steak were on the menu.  That was basically the extent of my game plan.

A few weeks prior I had a delicious scallop dish at a restaurant in San Diego. Instead of wrapped in bacon, it was crusted in bacon. My thought was “why didn’t I think of this?”

Coming from someone who likes really crispy bacon and lightly seared scallops, it’s impossible to get a bacon-wrapped scallop perfect to my liking. Really crispy bacon = over cooked scallop, perfectly cooked scallop = chewy bacon.

I added pistachios to the crispy bacon to crust the scallops. I love pistachios because they give a slight sweetness and great salty, nutty flavor to anything you add them to.

I’m pretty sure my roommate said it best, “scallops, bacon, pistachios, I like where this is headed!”

Where we were headed, was to one of the most delicious places my mouth has ever been! These scallops were perfection in a bite. I’m telling you, splurge this weekend and pick up some scallops at the grocery store, you will not be disappointed that you did!

Bacon Crusted Scallops Ingredients

  • 8 strips bacon (cooked & crumbled – reserve a small amount of bacon grease & set aside)
  • ¼ cup pistachios
  • 1 tbsp green onions
  • 1 tbsp fresh rosemary
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 12-15 large scallops

Bacon Crusted Scallops Instructions

Combine the cooked, crumbled bacon, pistachios, green onions and rosemary in a small food processor (or blender).

Blend for 10-15 seconds, or until well combined.

Place the mixture on a plate or in a shallow bowl.

Sprinkle both sides of each scallop with salt and pepper.

Coat each side of the scallop with the bacon pistachio mixture.

Remember when I told you to reserve a small amount of bacon grease in the skillet you cooked the bacon in? Well, that’s where this comes in!

Place that skillet back on the stove top over medium heat and add the scallops.

Cook for 3-4 minutes per side.

Melt in your mouth scallops, combined with salty pistachios and crispy bacon, does life get any better? I think not!

These are so quick and easy to make, but will totally impress any dinner guest!

Serve them with Kale Pesto Spaghetti or Instant Pot Pesto Risotto to complete the meal.
