Bacon Pistachio Crusted Scallops
Fresh scallops are coated in a crispy bacon, pistachio herb mixture and pan seared for a quick and simple, luxurious and flavorful meal.

cooked & crumbled – reserve a small amount of bacon grease & set aside

pistachios

green onions

chopped

fresh rosemary

kosher salt

large scallops
Instructions
Combine the bacon, pistachios, green onions and rosemary in a small food processor (or blender).
Blend for 10-15 seconds, or until well combined.
Place the mixture on a plate or in a shallow bowl.
Sprinkle both sides of each scallop with salt and pepper.
Coat each side of the scallop with the bacon pistachio mixture.
Place a skillet with the bacon grease on the stove top over medium heat and add the scallops.
Cook for 3-4 minutes per side.
