Frozen Strawberry Cheesecake Bars

This recipe for no bake frozen strawberry cheesecake bars with Nutella graham cracker crust is easy to make and the perfect summer treat!
Warm summer days deserve the perfect summer dessert! And that’s where these Frozen Cheesecake Bars come in! They’re super simple to make and a great cool treat to beat the heat!
Fresh strawberries are combined with a no-bake cheesecake recipe and placed on top of a Nutella Graham Cracker Crust. Oh no I didn’t. Yup, I did!!!
Toss this recipe together for a scrumptiously sweet snack that’s made with only 15 minutes of prep!
Frozen Strawberry Cheesecake Bars Ingredients
- 1 ¼ cups graham cracker crumbs
- ¼ cup sugar
- 5 tbsp butter (melted)
- ¼ cup nutella
- 16 oz cream cheese
- 1 cup powdered sugar
- ¼ cup milk
- 1 tsp vanilla extract
- 1 cup strawberries (sliced)
Frozen Strawberry Cheesecake Bars Instructions
Prepare the crust by combining the graham crackers and sugar in a large bowl, add the Nutella and butter and mix into a coarse crumble.
Press the crust into the bottom of an 8″ x 8″ baking dish.
Place in the freezer for 10 minutes.
In the meantime, prepare the cheesecake filling by using an electric hand mixer to combine the cream cheese, powdered sugar, milk and vanilla.
Blend until creamy, then hand mix in ¾ cup strawberries.
Remove the crust from the freezer, spread the cheesecake on top. Press the remaining ¼ cup of strawberries on the top of the cheesecake.
Place back into the freezer for at least 4 hours. Remove 15-20 minutes before serving to thaw enough to slice through. Cut into bars and serve.
So delicious, refreshing and easy to make!

I detest Nutella and was wondering if a Chocolate Syrup could be used in place of it.
Hi Faith, I’ve actually made these bars without the Nutella and it works just fine, so you can simply omit it in the recipe!

Would love to make this. Was wondering if I wanted to divide with up into 2 pans,would 2 8×8 pans work? Also, it wouldn’t hurt if I put more than 1 cup of strawberries in it would it?
Hi Bonnie! There wouldn’t be quite enough for two 8 x 8 dishes, so I think adding some strawberries might be the perfect way to make a little more and fill out the two dishes! Enjoy 🙂
