Gluten Free Baked Cheese Bites

Crispy on the outside, creamy on the inside, these Gluten Free Baked Cheese Bites are perfect for parties & much healthier than fried cheese sticks!
How delicious are fried cheese sticks?! Oozing with cheese on the inside and crispy on the outside, totally tasty, but totally not healthy, so I took this appetizer and made it healthier and gluten-free!
I used gluten free cereal combined with Italian seasonings to form a delicious crust around fresh mozzarella balls, then placed them under the broiler for just over a minute so the crust gets nice and crispy, and the mozzarella gets melty and creamy!
I had to bake these several different ways to get them just right, which meant a lot of taste-testing, needless to say it was a tough day in the kitchen! 😉
Ingredients
- 2 cups gluten free corn flakes cereal
- ¼ cup parmesan cheese (grated)
- 1 tbsp Italian Seasoning
- 24 marinated fresh mozzarella balls
- 1 cup marinara sauce (click link for homemade recipe)
Preheat the broiler on the oven to high.
Add the cereal, parmesan cheese and Italian seasoning to a food processor.
Blend into a fine crumb mixture.
Transfer to a shallow bowl or rimmed plate.
Roll the mozzarella balls in the mixture.
Place them on a parchment lined baking sheet.
Place under the broiler for 1-2 minutes.
Remove from the oven and serve immediately.
Skewer with toothpicks to easily serve at a party with warm marinara sauce on the side for dipping.
These little bites have such great flavor, and all the textures of fried mozzarella sticks, with much less guilt!
And they only take about 10 minutes to make! Winning!
