This week has been super busy, but also super fun! I flew up to Sacramento on Monday to make an appearance on Good Day Sacramento and share some of my favorite Summer Cooking Hacks. I flew home just in time to meet my Mom at the airport in San Diego. She flew in from Oklahoma to visit me for the week.
She’s been my assistant this week while I prepared several new yummy recipes for the blog. We made Salted Caramel Ice Cream, Jalapeno Steak Skewers and Red Velvet Cookies!

Speaking of one pot recipes, this One Pot Greek Pasta recipe is one for the books! It’s SO flavorful and easy to make! I ate it for back-to-back-to-back meals last week and was so bummed when it was all gone!
And since this Greek Pasta recipe is made in only one pot, you know what that means, only one pot to clean, woo hoo!
One Pot Greek Pasta Ingredients
- 2 tbsp olive oil
- 1 cup onion (diced)
- 3 cloves garlic (minced)
- 1 lb ground turkey
- 1 tbsp oregano
- 1 tsp parsley
- ½ tsp kosher salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes
- ½ cup sun dried tomatoes
- 2 roma tomatoes (diced)
- ¼ cup capers
- 8 oz can tomato sauce
- 2 cups macaroni noodles
- 2 cups beef broth
- 1 lemon (juiced)
- 1 cup feta cheese (crumbled)
One Pot Greek Pasta Instructions
Heat a large skillet, or dutch oven, over medium-high heat. Once the skillet is hot, add the olive oil and onions, saute for 4-5 minutes, add the garlic, saute 1 minute, then add the turkey.
Cook through, drain any grease, then add the oregano, parsley, salt, black pepper, red pepper flakes, sun dried tomatoes, roma tomatoes and capers. Simmer on low for 5 minutes.
Add the tomato sauce and macaroni noodles. Pour the beef broth over the noodles, cover the skillet and simmer for 15-20 minutes. Remove the lid and add the lemon juice to the pasta.
Transfer to a large bowl, sprinkle with the feta cheese and garnish with fresh chopped parsley if you’d like.

One Pot Greek Pasta
Ingredients
