Spicy Chicken Panini

Hot sauce sautéed chicken, pepper jack cheese and a spicy, creamy sauce make up this deliciously saucy and cheesy Spicy Chicken Panini recipe!

Just one taste of the Big Island Lava Sauce and I was quickly reminded of my good friend, buffalo sauce.
The Big Island Lava Sauce is vinegar based with a nice kick of spice and just a hint of sweetness, it’s perfect tossed with chicken in this spicy chicken panini recipe!
Just look at that cheesy goodness and try to tell me that your mouth isn’t watering!!
Ingredients
- 1 lb thinly sliced chicken breast
- ¾ cup King’s Hawaiian Big Island Lava Sauce (divided)
- 8 slices King’s Hawaiian Sliced Bread
- 8 slices pepper jack cheese
- ¼ cup blue cheese or ranch dressing
- ¼ cup shredded carrots
- ¼ cup green onions (diced)
- ¼ cup celery (thinly sliced)
Toss the chicken with ½ cup Big Island Lava Sauce.
Add the saucy chicken to a large skillet on the stove over medium heat and cook for 4-6 minutes, or until the chicken is cooked through.
Remove the skillet from the heat and set aside.
Place a slice of pepper jack cheese on each slice of King’s Hawaiian bread.
Top 4 slices of bread with the Big Island Lava Chicken.
In a small bowl, combine the remaining ¼ cup Big Island Lava Sauce with ¼ cup blue cheese or ranch dressing, green onions, celery and carrots. Divide this mixture over the chicken.
Top each sandwich with the remaining 4 slices of King’s Hawaiian bread with pepper jack cheese.
Place the sandwiches in a panini press or indoor grill (I used the TFal OptiGrill).

Ingredients

Instructions
- Toss the chicken with ½ cup Big Island Lava Sauce.

- Divide this mixture over the chicken.

- Place the sandwiches in a panini press or indoor grill.
- If in a press, cook for 4-5 minutes total. If on a grill or grill pan, cook for 3-4 minutes per side.
