Italian Turkey & Egg Breakfast Skillet

Turkey sausage, fresh veggies & eggs are combined in this gluten free, protein packed, Italian Breakfast Skillet recipe, made in one pan in 20 minutes!
Breakfast is not only the most important meal of the day, it also happens to be my favorite meal of the day!
The problem is, I don’t always make time to cook and eat breakfast every day.
You too? That’s kind of what I thought, so today I’m sharing a breakfast recipe that is so quick and easy to whip up, you’ll have no excuse for skipping the most important meal of the day!
This skillet is not only easy and delicious, it’s also packed with protein (33 grams per serving!) and it’s gluten free, making it a great healthy way to start the day!
Ingredients
- 1 tbsp olive oil
- ½ cup onion (diced)
- 3 cloves garlic (minced)
- 1 lb turkey breakfast sausage
- 2 cups diced tomatoes
- ¼ cup basil pesto
- 6 large eggs
- ¼ cup parmesan cheese (grated)
Add the olive oil to a skillet over medium heat. Add the onion, saute 4-5 minutes, add the garlic, saute for an additional minute. Add the Jennie-O turkey sausage and cook through, 6-8 minutes.
Add the diced tomatoes and basil pesto, mix everything together.
Crack the eggs on top.
Cover and cook 6-8 minutes. Remove the lid, sprinkle with cheese and serve.

This looks like my kind of breakfast! I love eggs and ground turkey with veggies layered with cheese! I’ve never tried just putting the eggs on top and covering it so I’m stoked to try it out. I recently got a poacher and it’s my favorite $5 purchase haha.
