Whole30 Chipotle Chili Stuffed Sweet Potatoes

Deliciously easy Whole30 chipotle chili is added to these stuffed sweet potatoes for a scrumptious gluten free and dairy free meal, made in under an hour!
I can’t say enough good things about the delicious combo of smokey, spicy chipotle chili + creamy baked sweet potatoes. They’re a match made in Whole30 heaven, that I could eat every week!
With minimal prep, you can have these stuffed sweet potatoes on the table for dinner in under an hour with only 15 minutes of active cooking time. Just cook the sweet potatoes in the oven, air fryer or microwave then prepare the chipotle chili on the stove. Let it simmer in all of the delicious flavors while the sweet potatoes roast, then put it all together and dinner is served!
To make the chipotle chili, you’ll need ground chipotle chili powder, which can be found at most major grocery stores in the spice section. If you can’t find it at your local store, you can always grab a jar on Amazon at the link above!
I love the bite of raw chopped onions and some creamy avocado on top, plus a little fresh chopped cilantro to garnish the stuffed sweet potatoes.
If you’re not on a Whole 30 or dairy free diet, feel free to add a little crumbled cotija cheese or shredded pepper jack cheese.

Whole30 Chipotle Chili Stuffed Sweet Potatoes
Ingredients
- 2 large sweet potatoes, scrubbed clean
- 1 tbsp olive oil
- 1 cup diced onion
- 3 cloves garlic, minced
- 1 lb ground turkey
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tbsp chipotle chili powder
- 14 oz can diced tomatoes
- 4 oz can diced green chilies
Optional toppings:
- cilantro, chopped
- onion, diced
- avocado, sliced
Instructions
- Preheat the oven to 400°F.
- Place the sweet potatoes on a baking sheet and into the oven for 45-55 minutes, or until fork tender.
- While the sweet potatoes are roasting, prepare the turkey chili.
- Add the olive oil to a large skillet over medium high heat.
- Add the onion and garlic, saute 3-4 minutes, add the ground turkey and cook through.
- Once the turkey is cooked through, add the salt, pepper, paprika, cumin and chipotle chili powder to the skillet and cook 2-3 minutes.
- Add the diced tomatoes and green chilies.
- Cover the skillet, reduce heat to low and simmer until sweet potatoes are done roasting.
- Remove the sweet potatoes from the oven and slice in half.
- Spoon the chili into each half and add the toppings of your choice.
