Mexican Street Corn Turkey Burgers
Mexican turkey burgers are covered in cotija cheese, guacamole and grilled Mexican street corn for a flavorful summer burger recipe!

cotija cheese

hamburger buns

guacamole
Instructions
Grill the corn for 3-4 minutes per side over medium heat.
Remove from the grill and use a sharp knife to remove the kernels from the cobs.
Combine the kernels with the sour cream, lime juice, cayenne pepper and cilantro in a small pot, set aside.
Place the turkey burgers on the grill over medium heat.
Grill for 9-10 minutes per side.
Top with the cotija cheese and grill for an additional 2-3 minutes.
Place the hamburger buns on the grill for 2-3 minutes.
While the burgers are grilling, place the pot of Mexican street corn on the stove over medium heat for 4-5 minutes.
Remove the buns from the grill and spread the guacamole on the bottom buns, then top with the burgers, the corn mixture and top bun.
